Our epithelial cells dissociate readily with the collagenase digestion we use to get our cells of interest, below in the stroma. But if all you want are the eps, and shellfish gill epithelial cells are anything like those in mammals, you shouldn't have to go to such lengths. I have recently 'discovered' (?) a nice paper in JIM which uses very short incubations in HBSS/DTT (not sure why) then HBSS/EDTA to selectively remove epithelial cells from porcine intestine.
