In Summit you can save the current active histogram as a file using "File->Save MetaFile Image". The resultant file can be inserted into a Word document and rescaled to suit. I think the only other way to avoid the bitmapped jaggies is to initiate a print but then, in the print dialog, divert that to save as a file. You will get a very big postScript file that might need some massaging before you can insert it [not an intentional metaphor] (e.g. you can use GhostScript (http://www.cs.wisc.edu/~ghost/) to convert it to .pdf type).
