Room temperature and Sort instability

The viscosity of water is temperature dependent. Any change in viscosity
will alter the speed of the jet and hence the distance between the nozzle
of the flow chamber and the point at which a droplet is formed (break-off
point). For this reason, it is advisable to fit air-conditioning in a
sorting laboratory to ensure that a constant temperature is maintained.
