Rhodamine B is used as a dye in foods and is fluorescent. Of the food dyes, Rhodamine B likely has the highest quantum yield in water and is relatively insensitive to pH changes near neutral (pH 4 to 10).

Does anyone knows whether there is any fluorecent dye that may be ok to be used in food, drinking water but also fluoresce?
