publication-quality histograms

I'm looking for a way to print publication-quality one-and two-parameter
histograms generated by Coulter Epics Workstation software. Although the
histograms generated by the Coulter software look fine, I don't know how to
get rid of the header and footer info without (literally) cutting and pasting.
Does anybody know of any COMMON software package that can do 2D contour plots
(e.g. like topographic or bathymetric maps) using an ASCII files? Or, is
there a better way?
Any suggestions will be much appreciated!
